Our story is deeply rooted in the region, but it’s told through a global lens, working work with artisans from all around the world, serving their craft and produce in their optimal state to amplify, refine, and reimagine the flavors that define our home.

Solemann Haddad is Dubai’s youngest Chef Patron and the recipient of the 2022 MICHELIN Young Chef Award and Gault&Millau’s Future Great of the Year.

Self-taught, he opened Moonrise without formal training—something he’s never seen as a limitation. Without the weight of classical mentorship, his perspective stayed wide open, unbound by rules or expectation.

Born and raised in Dubai, his cooking is rooted in the region, but shaped by global influences—especially Japanese ingredients and techniques. Over time, it evolved into what he now calls Dubai Cuisine: a personal, ever-changing expression built on obsession, and the love and appreciation of Middle Eastern ingredients, interpreted through a global lens.

He works closely with homegrown artisans, mills, and growers across the UAE, while also sourcing from the best producers around the world. Always in service of flavor, and of serving the best ingredients in their most expressive state.
